Bacon is one of life's great pleasures. Crispy, salty, and hot, it complements eggs and hash browns, sandwiches and desserts. But anyone who's been served a lump of greasy, soggy bacon knows how important it is to cook it to perfection.
What You Need
Ingredients:
High quality bacon
Tools:
Baking sheet with a 1/2"-3/4" lip (to catch the grease)
Aluminum foil
Instructions
1. Put your oven rack in the middle position, preheat the oven to 375° and line a baking sheet with aluminum foil.

2. Lay the bacon strips out flat on the baking sheet, leaving space so they don't overlap.

3. Pop the bacon in the oven for 15 to 20 minutes. If it's thick bacon that produces a lot of grease you'll want to drain the grease halfway through.

4. When the larger grease bubbles subside and smaller bubbles appear on the bacon, you know it's done (see pictures #3 and #4). If the bacon is already firm in the oven then it's cooked to long. Bacon firms up as it cools, generally.

Additional Notes: In picture #5 you can see the difference between the bacon on the left which was baked for 15 minutes at 375 and the bacon on the right which was cooked for almost 20 minutes. Depending on how crispy you like your bacon, you can pull it out early or leave it in for a bit longer, but a couple of minutes makes a big difference. Remember to save your bacon fat for future uses!
** to save your fat. just grab a small heatproof container and pour the fat into it (drain out the little bits).... leave it to stand till room temp and it will start to set, place into fridge and store (covered or it will absorb smells from the fridge)
Personally i love grabbing a bit of this and chucking it in the pan when frying mushrooms or egss - gives them a bacon flavour, i also use bacon fat when making scones as well, gives them a unique flavour especially if you make cheese and bacon scones.

My inlaws have been using bacon as egg rings for years. It just doesn't seem to work. For some reason I can't fathom, neither the bacon or the eggs taste as good as when cooked and served separately.

Here is my duck shooting opening weekend cook up. I put the shoulder of pork on at 8am, the fresh duck went in at noon and we ate at 3pm. So a beer can duck (this was super good!) A Slow cooked smoked pork shoulder, and the messy looking thing is my smoked bacon log that exploded (too much cheese). I smoked using Pegasus Bay red wine barrel shavings, and would of had the smoke going for a good 5 hours during the cook.

"I need your help. I'm driving from NY to LA with no cash and no cards — just a trailer full of Butcher Thick Cut Bacon to barter with you for food, lodging and everything else I need," actor Josh Sankey writes on his website. "It's all to find out if America loves this bacon as much as money!"
Still, there's one major caveat: actor Josh Sankey isn't just doing this on impulse. It's part of a coordinated effort by Oscar Meyer to promote their new line of bacon.
As part of the challenge, Sankey is required to travel across 12 U.S. cites, taking him from New York City to his final stop in Los Angeles on September 23.
And while the BBC reports on Wednesday that there could be something of a "bacon shortage" next year because of rising pork prices, Sankey will not experience such limitations. That's because he is traveling with no less than 3,000 pounds of bacon in his specially equipped Oscar Meyer truck.
Sankey is chronicling his voyage on his Twitter account and on the "Bacon Barter" site. On Wednesday, he arrived in Louisville, KY where he successfully bartered some bacon for a night in a man's basement. His host even got himself a bacon-themed tattoo to support the cause.

RECIPE
SPICY BEER CANDIED BACON - slightly adapted from Tide and Thyme
Preheat oven 400*F
1 lb extra thick smoked bacon
½ cup brown sugar
2 tablespoons any dark beer
2 tablespoons Frank’s Hot Sauce
THE STEPS
In a small bowl, combine, brown sugar, beer and hot sauce.
Line a large baking sheet with parchment
Place a rack the same size on top of parchment
Lay bacon on rack – don’t worry if the bacon overlaps, it shrinks as it cooks
Place in preheated oven for 10 minutes
Remove from oven and paint bacon on both sides with brown sugar mixture.
Place back in oven for 10 minutes.
Repeat process until sauce is gone and bacon is golden and crisp.
Remove from oven and allow bacon to cool for 1 hour.
THE LOVE: Watch your bacon closely. You want it golden and crisp not burnt and hard!
